Cheese
The Formaggio family has a 30 year history of sourcing artisanal cheeses directly from small farms and affineurs, giving us a broad and unusual selection. We import the majority of our cheeses ourselves, eliminating middlemen and allowing us to control storage conditions every step of the way from Europe to Boston. We store all of our cheeses in a temperature and humidity controlled cave below our Cambridge shop, a cave that was the first of its kind in the United States, and cheeses are delivered straight from the cave to our shop every day. Every morning we unwrap every cheese on our wall and scrape off the part of the cheese that touched the plastic wrap, and then rewrap. We cut our cheeses to order, and wrap them in special European cheese paper to protect them on their journey home with you.
